Tequila is a spirit made primarily in the area surrounding Tequila, a town in the highlands of the western Mexican state of Jalisco, 65 km northwest of Guadalajara. It is made from the blue agave (Agave Tequilana Azul), which is native to Mexico. Tequila is most often made at 38-40% alcohol content.
Tequila is usually bottled in one of five categories:
blanco (“white”) or plata (“silver”) – white spirit, un-aged and bottled or stored immediately after distillation, or aged less than two months in oak barrels.
oro (“gold”) – un-aged “blanco” tequila, blended with rested or aged tequilas, and often with caramel coloring, sugar-based syrup, glycerin, and/or oak extract added so as to resemble aged tequila.
reposado (“rested”) – aged a minimum of two months, but less than a year in oak barrels.
(“aged” or “vintage”) – aged a minimum of one year, but less than 3 years in oak barrels.
extra (“extra aged” or “ultra aged”) – aged a minimum of three years in oak barrels.
Says Chef Shrivant Rajgharia, Azzurro: “Tequila is one of the fastest growing spirits in the world. We know it as a Shooter or as the primary spirit in a Margarita cocktail. However, it is more versatile than that. As one can see from the types/categories of Tequilas available, it can be an extremely refined beverage that is indeed prized in Mexico as much as Champagne is prized in France!”

And as you enjoy your next Tequila shot at Azzurro, it might be a good idea to bust the myths that are associated with this complex and fine liquor:-
First and foremost – The worm is not part of the tequila. This is a nice legend, but not true at all. The worm is placed in some bottles as a marketing gig.
Second, the tequila shot. In Mexico, contrary to popular belief, tequila is drunk straight without salt and lime. At most, it is drunk with a side of sangrita-a sweet, sour and spicy drink, equal-sized shots of tequila and sangrita are sipped alternately, with or without salt and lime. Lastly, Tequila has no medicinal properties. There is no scientific evidence about any medicinal properties of the agave plant, neither mescal nor tequila. However if you drink a “caballito” every day, it will make you a happier person!
